First, the Norpro is %100 compatible with the Bron, including the Bron's replacement blades (available in a wide variety of sizes, though not at amazon--yet).
Safety: First, if you haven't put in at least a hundred hours on a mandoline, be sure to use protection. No, not that ...worthless/dangerous pusher. Use a butcher's glove (or "oyster glove"), preferably a chain mail one. You could get by with significantly more affordable Kevlar or "Fibers Woven with Stainless Steel Threading" ones, but you will be more prone to bruising and nicks. Second, keep your eye on the blade, not on the vegetable. Third, use smooth, swift strokes applying as much pressure toward the mandoline's face as you do on the stroke itself. Last, and most importantly- don't rush! Take your time, maintain your focus, zone out that burning smell coming from the oven.
The mandoline produces narrow shallow decorative crinkles. While waffle cut vegetables are quite possible with this sturdy industry standard, it takes a lot of adjusting and they come out thin without good definition of holes. For a better waffle cut consider a stand alone crinkle cutter. The washboard style ones typically aren't adjustable, so I'd recommend a hand held crinkle blade (look for deeper/wider scallops).
To produce uniform slices, you can either move the julienne blades to neutral or remove the blades completely. The first method often produces slices with nicks on them from where the slices catch on the hanging julienne blades. The second method is time consuming and may lead to eventually stripping out the nuts (so be careful not to over tighten).
This is a time saving and indispensable tool once you get accustomed to it. It could use more documentation.

Reviews on this product are showing up at opposite extremes...people loving something that someone finds awful. I just received my Benriner turning vegetable slicer Cookhelp today...I expected to be disappointed, given the negative reviews here. I opened the box carefully because I was sure I'd try it and return it..BUT I'm keeping it...I like it.
YES, it's plastic and lightweight and expensive...All that has been said about the price is true...You'd expect by seeing the photo and for the price that, at least, it should be made from metal..This isn't cheap-fall-apart plastic...The siding on my house is some form of plastic and has held up for 20 years. And now decking
and house pillars are made from plastic.. So, plastic products aren't necessarily crummy. I think this is
a well made product, although basic and utterly simplistic. I figured out pretty quickly that this gadget
holds more steady if you place it in the sink with a plate or cutting board under it to catch the curls...simply
because you need leverage to push downward. It didn't slide or slip and didn't feel unruly in my hands.
I didn't have much firm raw product in my house to work with when this arrived...Just apples, cucumbers and carrots. Three blades are included...They are small and sharp but very easy to change and the whole appliance is simple to wash. Mostly just a quick rinse. What holds the blade in place is a screw.....and easy enough to figure out how to change a blade without reading the instruction sheet...There is an arrow on each blade...The more finely tooth'd blade isn't good for much. I would suspect a really hard vegetable like a beet might be okay to try with this blade. I had no problem with the widest tooth'd blade cutting the carrot and apple. I had to cut the apple in a small piece....but the results were excellent...Curls of apple...only one chunk of apple didn't produce much food. The cucumber got mushy on the smaller tooth'd blade but improved it's ability to hold up when I used the largest tooth'd blade. The firmer the vegetable, the more you can assume the smallest tooth'd blade won't turn it to mush. And the higher the water content of the vegetable, the more
you need to assume you'd require the widest tooth'd blade.
The thing about this product is that this is made in Japan...The Japanese are very mindful in their food prep.
Watch them roll sushi..It's a mind-meditative thing and that made me realize that you can actually have fun
with this if you're not particularly in a major hurry. If I were feeding a large crowd or had a catering business,
this little gadget would be ridiculous...I'd be involved for hours trying to create enough swirly fruit or veggies
to produce enough food. But for home use, and one or two people...to decorate a salad....or make a nice
mound of raw beets, carrots and zucchini, I'm happy with the smallness and lightweight properties of this
gadget. REALLY, that's all this is....a gadget. It's not a food processor by any measure...It's not going to
do what a Cuisinart would do....It's a slow but efficient way to try new ways to eat raw foods...And yes, there
is always a leftover chunk of unprocessed food....I just eat it...I was going to eat it anyway in a curly fashion...
so no big deal. I like the concept of raw foods. My local health food store sells a sqiggly vegetable salad
that looks like it might be made on a gadget like this (although obviously commercial) and they charge
$9.00 a pound~! So, for the price of doing this myself, I'm saving money and having some fun!
So, I'm giving this product 5 stars. I like it a lot and don't have unreasonable expectations of how much
food it can process at one time...I'm enjoying it in the way the Japanese probably designed it....simple, efficient, non-electric and totally unlike the American way of thinking...which might be conceptually larger than an Asian's mindful way of preparing food.

I bought this thinking that I could make wonderful angel hair pasta with zucchini. Wrong. The shreds are so fine that they are only good for garnishing. After putting pesto onto the zucchini it turned into mush. I then tried carrots. Carrots are VERY difficult to do. You must put ALL your weight on it and turn. The shreds are great for garnishing a salad but I can do the same thing with a hand shredder that I already have. I tried apples since my kids wanted to play with it and they didn't have the strength to do the carrots. The apples turned into mush.
I am now looking for a horizontal type slicer that I saw in a Japanese store. Don't bother with this one.

I wish I could reverse my rating of this device from one star to 5 but I am not able to- please keep in mind that I no longer want to rate this 1 star when you read this review.
At first, I bought this product and got nothing but frustration from it. Usually my entire family can figure out new methods and ways to use things, even if hardly anyone else can figure it out.
I had given up.
I had gotten nothing but frustration with the Benriner Cook Help, so I wrote a review of it expressing it as such.
After writing the review, I approached the Benriner as someone who never saw it before and I started experimenting.
My problems had been due to miscommunication on how to use this unit. There is not a whole lot out there about the Benriner Cook Help, so I was depending on the few directions out there, and none of them worked.
Here is what I figured out:
Although it is often told that you can make angel hair noodles from zucchini, I was always told that you have to use the smallest blades to do this. That is not true.
The key to using this device is that the softer the vegetable, the larger the blade attachment that you need to use.
The result is to have very long spaghetti style noodles just like you would cook, but they are raw. Then you made raw tomato sauce by processing tomatoes, herbs, and veggies and use it over top.
I have not been able to get carrots to work with this yet, but I have been working most intently with zucchini because that was my biggest goal in using this device.
However, I have found that if you apply pretty solid heavy pressure on the unit with one hand and the handle while you crank it with the other, I can get most of the zucchini to spiral out in perfect noodles. My family loves it and I could not be more thrilled.
At first, I was using the smallest blades for things- but they would not work, and I got frustrated.
If you have hard seeds in the vegetables, you will also find that they will clog up the blade area in any size and make it so you can not spiralize as well.
If you work with it and learn what size works for what- you can get a lot of excellent performance from the Benriner Cook Help.
Lastly, take the blades out BEFORE you wash it, and it will clean up very easily.
I regret that I can not reverse my previous rating, but at least I got another chance to do a follow up review to let you know the update about what I have discovered!

As if it were possible, I've actually found another spiral slicer that I love even more! The Benriner Turning Slicer is very similar to the Benriner Cook's Helper, you'll often find this higher end model in restaurants. Benriner Spiral Slicers are ALL extremely reliable each of them offering true versatility and durability. These models are made of ABS and Nylon reinforced resin, this spiral slicer is here to stay! Just crank and churn with the option of cutting continuous strings, strips or curly strands with four different blades to choose from (1) Flat edged blade, and (3) Tooth edged blades (Coarse, Medium and Fine) This is all you'll need to get you're creative juices flowing. You can create beautiful salads, elegant garnishes and main courses, if you're a Raw Foodist. The famous Spaghetti type strands that all raw food diets long for, using yellow squash and Zucchini turn into beautiful replicas of their wheat counterparts. Want to experiment with super thin slices of cucumbers, potatoes, carrots, bell pepper and onions etc; be my guest because you can't go wrong! Everything turns out beautifully every single time. I had some zucchini angel hair with pesto at a potluck and was so amazed by it, I have been seeking the right tool for the job ever since. The little Joyce Chen gadget many seem to rave about gets such mixed reviews, I was afraid to try it. When I came upon the Benriner, I was sure I knew which brand I wanted - but was not sure whether I should go with the cook help (upright) model or the horizontal model.
I couldn't really find anything comparing the two. Best I could tell, they were the same, but one you pushed down on, and the other you pushed sideways one. The most compelling reasons to go with the upright model seemed to be cost and it seems like it should be easier to push down, than sideways. The most compelling reason to go with the horizontal model were the pile could grow bigger as you worked and you wouldn't have to move the unit, you could use bigger chunks of vegetables, and it seemed you could do a cabbage. I could not find a picture of cabbage being done on the upright one. For some reason I really want to do a cabbage on this thing so I got very hung up on that idea.
I'll spare you the details of HOW I ended up with 2 of them... but I did. The Cook Help we were going to return but ended up giving it to my mother in law and in the interest of science we tested both units. So now I can write what may be the lone review comparing the two units. (She was here while we did this, it wasn't a case of we used it and then said "Hey, here's a present for ya!" - just so I don't sound rude or anything here, LOL)
I did some zucchini on mine, with the medium blade. It worked GREAT. Yes, it does feel like the Play Doh Fun Factory for adults. Yes, the blades are very sharp. Yes the unit seems awfully expensive for what it is but it seems pretty sturdy - time will tell. What sold me on this brand over other brands is the ability to buy replacement brands.
When you use the horizontal model, you end up with a pile of "pasta" as well as a nail-shaped thing, a round disk of vegetable with a core about as thick as a pencil. This works it's way through a hole near the blade. For some veggies, like zucchini or cucumber, this is good - as this is the wet, seedy, messy part of the veggie. For others, like carrot, I think this model just wastes a lot. (BUT if you have kids who like carrot sticks, it's good... really, there are things you can do with the "waste" so it's not REALLY wasted - smoothies, veggie stock, etc)
The upright model does not have the hole to make this core. Instead it just grinds up the whole veggie, with the seedy stuff getting really mashed and wet near the center of the device, where the hole would be in the other one.
By the time we decide to try the upright model, instead of send it back, we were out of zucchini, so we used cucumber in both. The horizontal model makes drier, neater "pasta," I think due to the elimination of the core. The upright model makes wetter, slightly messier "pasta." Not super disgusting messy or anything, but you will see a difference if you compare both machines.
The downside of this is, we think - though we didn't try - the upright machine may be better for veggies like carrots, daikon, etc where you could use the whole thing. No waste.
So which is better? For zucchini and cukes, the horizontal machine is a little better. For carrots, we think the upright is better. Both will suffice for either - though I still don't know about cabbage! I am happy I bought my horizontal model, and my mother in law is happy so far with her freebie upright. The blades are the same between the two machines, it's just that lack of a hole that is different. I guess it comes down to budget and what veggies you think you will do most of. (And you can't just drill a hole in the upright model!!! It's really a hole with a round metal blade in it, like an apple corer)
So there you have it. A review finally comparing the two. I hope this helps some people out. Maybe I will update when my mother in law actually gives zucchini a go on her machine.

I had to give this product two stars for the concept and at least one star because it does exactly what the manufacturer says it does, but nothing more plus not everything you make using this product turns out completely awful. Versatile this tool is not! To start your vegetables must be 1-inch in diameter and 3-1/2 inches in length. After you've finished cutting you are left with at least 1-inch of unuseable vegetable, unless you're willing to do the rest of your creative cutting by hand, not only does this limit you but it also creates a great deal of waste. You have only 2 blade choices which are housed in a poorly constructed plastic contraption that easily separates if pressed on in the wrong spot.
You have your choice of either Spaghetti type strands or spiral slices but don't expect anything pretty with your spaghetti strands because your only option is a very fine tooth edged blade which creates very fine strands of mush depending on what you're cutting. However, this product does have one redeeming trait and that's with the use of the flat edged blade it does create fairly nice looking spiral slices. If you're expecting true versatility than you will have to cough up the dough for "The Benriner Cooks Helper", "Benriner Cook Help" or the "Benriner Asian Sprial Slicer" (they're all the same) which gives you (3) Tooth edged blades (fine, medium and Coarse) as well as (1) flat edged blade, the size of your vegetables do still matter for cutting but you don't throw away nearly as much. Shop around for the best price!

My mother had one of these lots of years ago. In the process of moving her stuff... and my stuff... it came up missing. Finally I found a replacement. FOr some things this can't be beat. No mess, no waste.
I have a spiral cutter for pasta spaghetti, but still use this for hard veggies like sweet potato, carrots, diakon, etc.
You won't be sorry. Cheap and neat.

This makes 2 types of cuts, a "ribbon" cut and a "shred" cut. You can also make various slices and cubes by making cuts in the vegetable before inserting into the slicer.
I love to mix raw carrot shreds (much longer and thinner than pre shredded bagged stuff you can buy), I think of it as carrot "angel hair" with cucumber ribbon, and other shreds like daikon and jicama for veggie "pasta salads". Steamed zucchini, carrot, and parsnip shreds make a great substitute for pasta with tomato sauce.
If these are things you think you'll eat a lot and you like gadgets, this is a good buy. If you're looking to make perfect fancy garnishes, this isn't as precise as the expensive model spiral slicers. (or as versatile, I think some of the $250 models make more different sizes of shreds.)
Note on using it: read the instructions. You need to cut the ends of the vegetable even to get good shreds, and you need to apply steady downward pressure to the handle while turning, or you wont get long continuous ribbons or shreds. If this kind of thing is not instinctive to you, it may take some practice. Don't give up afer your first try, buy a big bag of carrots and practice the rotation/pressure to get it right.
So far it has cleaned up really well and pretty quickly, but you'll want to rinse it right after use because veggie matter does stick in the "shreds" blade and if it dries could be a pain to clean out. (carrots will stain the white plastic part orange, but it doesn't hurt it any.)
I love it and use it almost every day, but I wouldn't call it a "must have" for everyone. If you're not really excited about the prospect of shredded veggies for a salad or veggies as an alternative to pasta, you probably would not use it much.
if you could adjust the thickness of the ribbons/shreds and it were a teensy bit sturdier, I'd give this five stars.

My wife wanted to be able to make spaghetti-thin strands of carrot, beet and other vegetables, to add to salads and soups. This thing fits the bill perfectly, and works like a charm. The only caution is that it is difficult to figure out how to use it from the instructions, which are in Japanese with a hit-and-miss (and sometimes humorous) English translation. Once I got it working, though, it was fast and easy to shred and slice vegetables, and fast and easy to clean. Highly recommended.
