I have been using a rolling slicer similar to this one for 15 years.
Mine is from a company named EMSON and was made in the 80s. I have been searching
for this tool and finally found it.
I make Tabouli which requires fine-chopping parsley into very fine pieces.
After I do the rough cut, I roll over it (and the mint) with this tool.
Bottom line, it eliminates at least one hour of preparation. It's a great helper for under $10.

I have been using this product for a few years now. It is a very simple kitchen tool that does the job well enough in many situations. It julianne slices ginger, cucumber, carrot, and a lot of other things, especially for those that are used in bulk quantity or only for flavor. For example, when I make ginger-infused dry vermouth, I can use less ginger and still extract ginger flavor fully and quickly by julienne slicing ginger. If I'm slicing ginger by hand, I'd not bother julienne slicing and use more sliced ginger and infuse a bit longer. But this thing is handy in a situation like this. (Julienne sliced ginger is easy to remove by straining.)
For salad and garnish, I would still slice them by hand. The cut surfaces do not look as pretty compared to the results I can get easily using a very sharp vegetable knife (which is generally true for a lot of cutting tools of this type). The advantage of this tool is speed and simplicity. Again, I would not use this thing to make garnish, unless I'm cooking for a large party. But then a better option is a professional quality mandoline with a proper blade.
Among a few other good options for julienne slicing, I still rate it 4 stars because it is simple, easy to use, quick to wash and store away. Professional grade mandoline would require more work to set up and clean up. Hand cutting would require clean cutting board space. This tool requires not much more than two hands to work with.

It slices just about any fruit or vegetable with exceptional ease. It will also slice your fingertips with ease if you're not careful with it. The ceramic blade is insanely sharp - the reason it works so well - and holds its edge for a very long time. The only downside is the handle. Holding it with the handle while slicing doesn't work very well for me. The best technique I've found is to place the slicer flat on a cutting board with the handle hanging off the edge, holding the handle with one hand and running whatever I'm cutting over the blade (WITH the holder once your fingers start getting close) with the other.
An excellent kitchen utensil, but one that requires some extra respect and caution during use. It seems to be a bit more durable than the adjustable version, and I like being able to slice with a "back-and-forth" motion - it makes quick work of whatever I'm preparing.
One thing that's not often noted is that food sliced with a ceramic blade doesn't seem to oxidize (react with air) as quickly as food sliced with a metal knife. It's very noticeable with things like apples. Very strange, but in a good way.
We now have quite a few Kyocera Ceramic knives and utensils and we're very happy with all of them.

When I say "one thing", I do not mean to slander this device as a unitasker. It will not julienne -- but I don't julienne anyways. It won't cut spiral slices from an onion, if you're cooking your way through Michel Richard's book -- but you can get a much better device for that strange task. Instead, Kyocera made a nearly idiot-proof slicer that Does What It's Supposed To. This is about 99% glorious and 1% terrifying. Read on.
It slices paper-thin (I believe the measurement is 2mm?) planes of whatever you run across it, and it does so very, very quickly. The biggest drawback of this device is also its biggest strength -- before you know what happened, your garlic clove or pear or potato is sitting in a pile on your cutting board, neatly reduced to loose-leaf, and if you are not careful, you will have to hunt around for the bit of fingertip that got lopped off by the exceptionally sharp blade. It slices anything you put in its path, which is exactly what it's supposed to do -- so don't slice your fingers!
The designers were not joking when they emblazoned the device, the package, and all the marketing materials with warnings about how sharp the blade is You might think the hand-guard would ameliorate this hazard, but you'd be wrong, except for boundary cases with big thick vegetables. And you'll find yourself using this for so many smaller or wigglier vegetables that you will eventually dispense with that thing, so Watch Out. It's SHARP.
I find the hand-guard / smoosher to be almost useless unless you have a big, wide vegetable with a vast expanse of firm flatness to poke it into. Mostly I end up using my fingers and paying as much attention as I can to avoiding the maw of the slicer. It *WILL* cut bits of your fingers clean off, and it's so sharp that if you have calluses as thick as mine (from climbing and lifting weights), you may think you've escaped without incident. Don't be so sure. Look for the telltale flat pink bit on the end of your fingers and FISH THAT OUT OF THE SALAD, you savage! Not that I would ever find myself in such a situation, oh no. But, uh, I've read...
In any event, this device looks like junk and works like a charm. I paid $10 for mine and I use it constantly. It Just Works. You should try it.

The Kyocera adjustable mandoline slicer is an excellent product! I have used mine for almost 1 year and have no major complaints, the only one being that Kyocera could have designed the guard to snap in place covering the blade for storage. I keep mine in the plastic "dome" that it was packaged in. It is definitely VERY SHARP, so use the guard. It will effortlessly slice any vegetable: onions, cucumbers, potatoes, carrots, etc.. Easy to use, no assembly, etc. Highly recommended.

The product cuts well and makes french fries pretty well. I bought this for cutting potatoes and all remarks are based on that use. The problem I had with it is the reverse end of the cutting blade... It's not flat to the slide bed when installed for normal (non-crinkle) cutting. This means that when you have made a cut and are sliding the food back up the ramp for the next cut (the back stroke), the bulged up crinkle blade grabs the food and grates a bit of it off adding a lot of drag. This would also make very thin slices impossible because they always have one side damaged by the curved crinkle blade. If you know someone with a bench vise and thick leather gloves the blade could probably be corrected. Always be careful when handling the blade for any reason, it is very sharp.
Another issue that might cause a problem for people cutting thick slices is the location of the knob that holds the main blade in place... dead center so your thick slices will run right into it as they are being cut. This increases the force you must use and damages your thick slices.
All in all I would not buy this product if I had this information in advance, no reviews where available when I ordered. I am a handy person and have corrected the first problem above and I think I can live with the second issue, so I will not be returning the item. I really expected better from Oneida, but you do get what you pay for in the end. The only mandolins I have ever used were restaurant grade and you can expect to pay at least $100 for one of those models. If you plan on using the slicer a lot, spend the money for a good, well-reviewed product.

First, the Norpro is %100 compatible with the Bron, including the Bron's replacement blades (available in a wide variety of sizes, though not at amazon--yet).
Safety: First, if you haven't put in at least a hundred hours on a mandoline, be sure to use protection. No, not that ...worthless/dangerous pusher. Use a butcher's glove (or "oyster glove"), preferably a chain mail one. You could get by with significantly more affordable Kevlar or "Fibers Woven with Stainless Steel Threading" ones, but you will be more prone to bruising and nicks. Second, keep your eye on the blade, not on the vegetable. Third, use smooth, swift strokes applying as much pressure toward the mandoline's face as you do on the stroke itself. Last, and most importantly- don't rush! Take your time, maintain your focus, zone out that burning smell coming from the oven.
The mandoline produces narrow shallow decorative crinkles. While waffle cut vegetables are quite possible with this sturdy industry standard, it takes a lot of adjusting and they come out thin without good definition of holes. For a better waffle cut consider a stand alone crinkle cutter. The washboard style ones typically aren't adjustable, so I'd recommend a hand held crinkle blade (look for deeper/wider scallops).
To produce uniform slices, you can either move the julienne blades to neutral or remove the blades completely. The first method often produces slices with nicks on them from where the slices catch on the hanging julienne blades. The second method is time consuming and may lead to eventually stripping out the nuts (so be careful not to over tighten).
This is a time saving and indispensable tool once you get accustomed to it. It could use more documentation.

Whatever Amazon's calling it, this is in fact the "Super Benriner"--big brother to the regular Benriner. What's different? Well, it's beige instead of green, it has metal adjustment and blade holder knobs, and it's much, much wider. Cuts like a dream, but the hand guard is still something of a joke and a Kevlar glove would be a good idea regardless of how careful you think you might be.
My one complaint is that the white-ish plastic stains pretty easily. Carrots will leave a big orange smear on the surface.

Well, I'm shocked that there are ANY positive reviews for this gadget. If ANYBODY is the "gadget queen" in the kitchen, it's me. I own and have used the Boerner V-slicer for at least 15 years and love it, but sometimes when you just have a small, quick job to do, I thought this might qualify - so I went and bought one. I think it's terrible! First of all, the finger protector is almost unusable. The points on the underside meant to grab and hold onto the food are so shallow that they don't want to penetrate the piece of vegetable or fruit or maintain its grip on it more than one swipe across the cutter. So, I resorted to just holding the apple quarters, in this case, with my hand with plans to just not slice the last little chunk of each piece when I was getting too close to the blade. The adjusting of the cutting thickness is already a big pain as the little control/slider wants to stick at each junction, making it difficult to change the thicknesses. When sliding the apple in the downward motion, it made perfect and uniform slices. But, when you are sliding it back up (the hand motion is usually rapidly sliding the pieces of food down and then back up across the blade) - well, the food tends to sort of get caught in the returning motion on the far end of the blade. There's a little ridge or separation bet. the blade and the support so it catches the food on the upward motion, frequently "yanking" it out of your hand. This causes the food to drop away and creates a potentially dangerous environment as your hand is normally moving back & forth fast so that you could end up slicing your fingers on the way back down again across the blade before you even realize that the food fell away from your hand. Is that understandable?? Sorry, it's just dangerous and because of it's poor design, it encourages people to not use the finger protector which is an accident waiting to happen. I'm returning mine.

First of all poor directions came with it and other than just slicing up a straight cut on a potatoe, nothing else really works. Grating anything is messy and wastes more of the vegtable than grates it. I went back to my manual hand held grater quicker and easier.

I'm a big fan of Chef'n products, so I was pretty excited when I saw this collapsible mandoline. I gave it as a holiday gift and we've used it a handful of times with varying levels of success. Works better with softer items - the harder the food is, the more you have to work to get the blade to cut it. For example, regular potatoes and beets (both semi-firm) work pretty well but sweet potatoes (fairly dense) are quite a struggle.
Pros: Dishwasher-safe is a HUGE plus, as I'm not going to mess around with a super sharp blade any more than I have to. Sleek and easy to store. Quality feel and attractive look. Blade is adjustable so you have some control over slice thickness. Collapsible finger guard is a nice idea so that you can get down to the very last bit of your food.
Cons: The finger guard doesn't really hold onto the food very well, the barbs that are supposed to help keep it intact aren't long/sharp enough to pierce the item. They're just plastic bumps so they don't actually grip the food in any way. As a result, you end up pressing down a lot harder than you think you should so that the food doesn't slip away. Pressing down extra hard on a mandoline is just asking for a gruesome injury.
All in all, it's not bad but I think I'll try a different brand the next time I'm in the market for a mandoline.

I've had this mandoline about 4 months after reading the recommendation of a Washington Post writer. It has worked well enough, but I sometimes wonder if the Boerner V-slicer would have been a better purchase. The blade is *not* that sharp, although it does a good enough job on potatoes, my main use for it. It is easy to clean and the blades are all right there when you need them, but I have one big gripe. The holder/pusher seems to "grasp" a lot of whatever you are cutting, leaving huge chunks of leftover potato, cucumber, carrot or whatever. My objective is not to throw away 15-20% of my vegetables.
Addition to review: returned said mandoline and replaced with Boerner V-slicer. No comparison! The V-slicer is sharper, easy to use, and doesn't waste large chunks of vegetable. It Sliced cukes and tomatoes with ease!

The slicer does a good job on making waffle cut potatoes, which is what I wanted, but the safety holder (shown in the photo of the item) is not included, and there is no warning that this must be bought separately. The first instruction is "Alway use safety holder," which is a good instruction, and therefore the buyer should be warned ahead of time that it is not included - or else the holder should not appear in the picture of the product.
The potato goes into the slicer fairly easily to start, but it is rather difficult to get it to go all the way through for a complete slice. Perhaps if I had the safety holder, slicing would be easier. If you have another mandoline that uses the same safety holder, then you probably would not need to buy one, but unfortunately this was not the case for me.

I have used many differnt brands and styles of mandolines and this is by far my favorite. I use it most often for making scalloped potatoes (until I got this one, my husband called them bloody scalloped potatoes) and it is just great. I like the fact that the blade isn't exposed until you pull on the handle and I like that the blades are fixed (less chance of cuts). I generally just use the thinnest settings, but it does have a little button you slide to change the settings for thicker slices. It is also nice to be able to see through the mandoline to what you are slicing into the bowl ( the runway area is see through). I did notice if you slice onto a plate rather than a bowl, the vegetables can get stuck in the slicer as the veggies build up. Less chance of this when using a deeper bowl.
