I had hoped that this would be it, the One, the mandolin I keep. It's going back, though, because the permanent blades responsible for the success of the cutting operation aren't sharp enough to consistently cut. Super sharp replaceable blades in different sizes are great, but half the equation is in the permanent blades. These are too dull to complete a good cut...so dull that the operation becomes quite dangerous, even with the provided pusher. Overall the unit is high-quality and sturdy. If a little extra attention had been put into the blades the high price tag would have been acceptable, but because of the dullness of important blades, this mandolin doesn't perform any better than the 35 dollar version rendered in plastic. Too bad!

I have been using a rolling slicer similar to this one for 15 years.
Mine is from a company named EMSON and was made in the 80s. I have been searching
for this tool and finally found it.
I make Tabouli which requires fine-chopping parsley into very fine pieces.
After I do the rough cut, I roll over it (and the mint) with this tool.
Bottom line, it eliminates at least one hour of preparation. It's a great helper for under $10.

I really think Hoffritz is missing the boat by not selling this slicer in an infomercial. This is one kitchen gadget that really works. One feature that sets it apart is the stainless steel bowl that the slicer portion sits on. It is high quality and nearly worth the price of the slicer by itself. The rubber feet on the bottom of the bowl are effective in their designed use to prevent the bowl from wandering on the countertop as one uses the slicer on top of it. A feature that the Amazon description did not mention is the rack which holds all the blades, protecting both one's fingers and the blades. I get perfectly uniform slices of carrots and zuchini and potatoes with ease and the food holder even rides on a pair of rails on top so it can not slip off. A surprising aspect of using this slicer is that it actually makes food go further because once you see the pile of slices you can get from , for example, just one carrot , you may decide you don't want to use two. If you do slice more than you need which is easy to do because it is almost fun, the handy plastic cover snaps onto the bowl and will protect the contents well in the fridge. Hoffritz has been reknowned for fine quality blades for many years and the slicer is blessed with durable and sharp ones. Most of all this thing just oozes quality and is very satisfying and efficient to use. Factor in the time savings and how easy it is to clean , just a quick rinse usually does it although the whole thing is diswasher safe and you have great addition to any kitchen.

I bought this item directly from the Vidalia website. I was excited about owning a device which could slice, julienne and even chop! Well, it cannot do any of the above. Even if by some miracle you can get it to work, you will end up mangling more than half of the piece of vegetable you are trying to process. It was a total waste of my money. They make it look so easy on TV...do not be deceived.

My first mandoline was the Bron which is visually the most serious/macho/cool of the bunch, but its shortcomings were unacceptable - the slicing blade is one-piece stainless, and can't hold a sharp edge; the julienne blades are not sharp and can't be sharpened; and the safety carriage is designed to not go past the cutting edge. I sold it.
I now have a Matfer (the all-stainless model) and it has a 2-piece slicing blade: the cutting edge is high-carbon steel (which can be sharpened and hold its edge) welded to a stainless part. The julienne blades are very sharp (altho can't be resharpened). The safety -gadget thing works well, but can't be used for waffle cuts. I use the Matfer only for waffle cuts and if I have large quantities of slicing. If you want french fry size potatoes or are slicing celeriac, you're better off with a sharp knife. The disadvantage of this machine is that you can't adjust the slicing blade's uniformity of thickness - my slices are thicker on one side (the Bron had more adjustment leeway).
The machine I use the most is the Benriner - the slicing blade is very sharp and is sharpenable. The (unsharpenable) julienne blades are extremely sharp. It can't do waffle cuts and is not good for massive quantities of large cuts. It's best for finer julienne and thin slicing such as potatoes, cucumber or daikon.
Don't even consider using these machines without the safety gadget.
Unless I have a large quantity of slicing to do, I'd opt for a sharp knife, because cleanup time counts too.

I am skeptical of fancy kitchen tools because I tend to be a kitchen purist who believes that with a good set of knives and some skills a wanna-be-chef can slice paper-thin potatoes, onions, or anything that comes along the way. So, when this mandoline was brought home, I was ready to find faults.

My first impression was that this was a larger mandoline than I had seen before; it's really more of a professional size and demands some counter space. Setup is simple: expand the two "feet" which are covered with non-slip rubber and the mandoline sets up on the counter at an appropriate angle. Six blades also come in a handy plastic box. One thing that was a tad strange was that the box seems to hold only five blades; so the sixth one hangs homeless! However, the blades are very easy to slide into or out of the mandoline.
The piece that you hold your vegetables with looks serious but operates quite simply. You put your vegetable on one side and push it into the 'pins' which dig into it. This also pushes out holding end. The trick is to keep a steady pressure on this holding end and slice on the blade. You can adjust thickness of the cut using a small lever underneath the cutting surface that angles the resting surface-- a simple and elegant design. I see some reviewers have talked about half of the vegetable getting caught in the blade. Two words of advice: one, you have to learn to push veggies into the food-holder so that the pins can grip on and not slide off. Two, keep constant pressure on the food-holder--it takes about a minute to get used to.
Let's talk about the actual food that comes out of this device. Depending on which blade you use, you can get julienne, waffle, or sliced cuts. I found that after a couple of potatoes, I started getting very even waffle cuts straight to the last slice! Something that even the sharpest knives and months of practice will not do!
PROS:
- Very well-constructed.
- Matches with professional stainless steel kitchen appliances and tools.

CON:
- The manual does not recommend how to place food in the food holder.

It slices just about any fruit or vegetable with exceptional ease. It will also slice your fingertips with ease if you're not careful with it. The ceramic blade is insanely sharp - the reason it works so well - and holds its edge for a very long time. The only downside is the handle. Holding it with the handle while slicing doesn't work very well for me. The best technique I've found is to place the slicer flat on a cutting board with the handle hanging off the edge, holding the handle with one hand and running whatever I'm cutting over the blade (WITH the holder once your fingers start getting close) with the other.
An excellent kitchen utensil, but one that requires some extra respect and caution during use. It seems to be a bit more durable than the adjustable version, and I like being able to slice with a "back-and-forth" motion - it makes quick work of whatever I'm preparing.
One thing that's not often noted is that food sliced with a ceramic blade doesn't seem to oxidize (react with air) as quickly as food sliced with a metal knife. It's very noticeable with things like apples. Very strange, but in a good way.
We now have quite a few Kyocera Ceramic knives and utensils and we're very happy with all of them.

If you do a lot of slicing of vegetables in the kitchen, then you need a mandoline. This is my first one that I have gotten. It's pretty simple and it does what it says it will. The blades are sharp, but lets be realistic, it's not going to paper slice thin that fresh tomato. But it will completely chop a large onion in 6-7 swipes! It will shred/chop/julianne stick veggies quickly...you have to do it by hand and not use the large veggie impaling holder. Just be careful with the fingers as you get towards the end of the veggie. But not a problem if you pay attention. One thing that irritated me in the beginning was the plastic swing arm. Once I pried it off of the post, it made chopping much easier.
Yes it's big, but again, I can chop MOUNDS of veggies in 1/4 the time.
Totally dishwasher save too.

The Kyocera adjustable mandoline slicer is an excellent product! I have used mine for almost 1 year and have no major complaints, the only one being that Kyocera could have designed the guard to snap in place covering the blade for storage. I keep mine in the plastic "dome" that it was packaged in. It is definitely VERY SHARP, so use the guard. It will effortlessly slice any vegetable: onions, cucumbers, potatoes, carrots, etc.. Easy to use, no assembly, etc. Highly recommended.

I had the original V-slicer, but the ex-wife took it. I shopped around for a replacement, but could not find anything that really would replace my V-slicer - but this. It is almost Identical to the V, but has a slightly less sturdy frame - unless you put it on the included holder. Then, it works like the original (which gets excellent reviews) but has a place to catch the food and associated juices. The non-slip rubber pads on the holder work great, and eliminated the one problem I had with the original - that it would slide around.
If you get this, just remember that it is the speed, not the force with which you slice, that makes all the difference.

The product cuts well and makes french fries pretty well. I bought this for cutting potatoes and all remarks are based on that use. The problem I had with it is the reverse end of the cutting blade... It's not flat to the slide bed when installed for normal (non-crinkle) cutting. This means that when you have made a cut and are sliding the food back up the ramp for the next cut (the back stroke), the bulged up crinkle blade grabs the food and grates a bit of it off adding a lot of drag. This would also make very thin slices impossible because they always have one side damaged by the curved crinkle blade. If you know someone with a bench vise and thick leather gloves the blade could probably be corrected. Always be careful when handling the blade for any reason, it is very sharp.
Another issue that might cause a problem for people cutting thick slices is the location of the knob that holds the main blade in place... dead center so your thick slices will run right into it as they are being cut. This increases the force you must use and damages your thick slices.
All in all I would not buy this product if I had this information in advance, no reviews where available when I ordered. I am a handy person and have corrected the first problem above and I think I can live with the second issue, so I will not be returning the item. I really expected better from Oneida, but you do get what you pay for in the end. The only mandolins I have ever used were restaurant grade and you can expect to pay at least $100 for one of those models. If you plan on using the slicer a lot, spend the money for a good, well-reviewed product.

First, the Norpro is %100 compatible with the Bron, including the Bron's replacement blades (available in a wide variety of sizes, though not at amazon--yet).
Safety: First, if you haven't put in at least a hundred hours on a mandoline, be sure to use protection. No, not that ...worthless/dangerous pusher. Use a butcher's glove (or "oyster glove"), preferably a chain mail one. You could get by with significantly more affordable Kevlar or "Fibers Woven with Stainless Steel Threading" ones, but you will be more prone to bruising and nicks. Second, keep your eye on the blade, not on the vegetable. Third, use smooth, swift strokes applying as much pressure toward the mandoline's face as you do on the stroke itself. Last, and most importantly- don't rush! Take your time, maintain your focus, zone out that burning smell coming from the oven.
The mandoline produces narrow shallow decorative crinkles. While waffle cut vegetables are quite possible with this sturdy industry standard, it takes a lot of adjusting and they come out thin without good definition of holes. For a better waffle cut consider a stand alone crinkle cutter. The washboard style ones typically aren't adjustable, so I'd recommend a hand held crinkle blade (look for deeper/wider scallops).
To produce uniform slices, you can either move the julienne blades to neutral or remove the blades completely. The first method often produces slices with nicks on them from where the slices catch on the hanging julienne blades. The second method is time consuming and may lead to eventually stripping out the nuts (so be careful not to over tighten).
This is a time saving and indispensable tool once you get accustomed to it. It could use more documentation.

Compared to some of the other plastic, lower cost mandolins the Super Benriner feels much sturdier than most and delivers in all the necessary areas. The blades are sharp and decent quality, the size is perfect for most general kitchen uses and the four blades give the average cook all that they will need. Along with some basic steps in care, such as washing and drying the unit and blades right after use, the Benriner should last it's price.
This unit does not have those "handy" legs like some of the others and I feel that makes it sturdier but it also means you don't have that convenience (I prefer sturdy over convenient). There aren't any "no skid" pads on the bottom edges so you need to create your own sturdy blocking (I run mine up against a large wooden cutting block which works fine but this is one improvement I would like to see on the unit). The slot for the 3 changeable blades is easy enough to figure out but one really needs to tighten the two "holder" screws tight or the blade will slide out while cutting (not a safe thing to happen on a mandolin). The method (two screws) for setting the cutting height is a bit cumbersome but I think this is another place where sturdiness wins over convenience in a lower-end device.
So, the only two things I'd like to see changed on this unit are the addition of some "no-skid" rubber edges and a more effective and easier way to secure the interchangeable blades.
Overall, a good lower-end, starter mandolin.

I have used many different slicers (V-type, diagonal) and this stainless steel Bron which I also own is my favorite by far. The Borner V slicer I own does not have legs and is thus unstable, it is okay for quick non-uniform shredding and slicing. This model has it's own legs so your two hands can focus on the cutting. If you simply pay attention to where the blades are (put the cell phone down), you shouldn't cut yourself. It has a sliding guard for the food to rest in which attaches to the mandoline (which in the picture of the item is shown attached upside-down) and I believe to be safer than the free floating guards of the others. One plus of the steel construction is absolutely true uniform slices which are produced, which has not been experienced with plastic slicers. If you have the money, it is a great investment that should last you your lifetime.
