I am skeptical of fancy kitchen tools because I tend to be a kitchen purist who believes that with a good set of knives and some skills a wanna-be-chef can slice paper-thin potatoes, onions, or anything that comes along the way. So, when this mandoline was brought home, I was ready to find faults.

My first impression was that this was a larger mandoline than I had seen before; it's really more of a professional size and demands some counter space. Setup is simple: expand the two "feet" which are covered with non-slip rubber and the mandoline sets up on the counter at an appropriate angle. Six blades also come in a handy plastic box. One thing that was a tad strange was that the box seems to hold only five blades; so the sixth one hangs homeless! However, the blades are very easy to slide into or out of the mandoline.
The piece that you hold your vegetables with looks serious but operates quite simply. You put your vegetable on one side and push it into the 'pins' which dig into it. This also pushes out holding end. The trick is to keep a steady pressure on this holding end and slice on the blade. You can adjust thickness of the cut using a small lever underneath the cutting surface that angles the resting surface-- a simple and elegant design. I see some reviewers have talked about half of the vegetable getting caught in the blade. Two words of advice: one, you have to learn to push veggies into the food-holder so that the pins can grip on and not slide off. Two, keep constant pressure on the food-holder--it takes about a minute to get used to.
Let's talk about the actual food that comes out of this device. Depending on which blade you use, you can get julienne, waffle, or sliced cuts. I found that after a couple of potatoes, I started getting very even waffle cuts straight to the last slice! Something that even the sharpest knives and months of practice will not do!

- The manual does not recommend how to place food in the food holder.

7 STARS ! Having been a Head Chef (4 STAR Hotel in Hampton Court - Henry VIII's Palace) in a previous life, I know the benefits of using a highly efficient tool to make a boring repetitive task bearable. After thoroughly researching the market, I came a cross this little beauty. It even makes peeling spuds - FUN ! Shush ! don't tell anyone I said that, as I don't want to be thought of as SAD. It does its job superbly well, and is a joy to use.
NOTE: In use, I found the swivel peeler to be better for rounder items such as Spuds, and the Y peeler better for longer items such as Carrots and Parsnips. Horses for courses.
When something exceeds your expectations by a country mile, then it must be really good. BUY IT NOW, you won't regret it. Its macho boyfriend, the i-Series Y Peeler, is also superb, and is also a BUY IT NOW !
If you buy both, you will make them very happy, as they can then canoodle together in the drawer in the dark !

Sleek, elegant, quick and sharp, like Emma Peel, the RSVP peeler is one of the easiest and most efficient. I was fed up with dull peelers scraping and tearing, and set out to find the best. I now own about a dozen, including a couple that cost a ridiculous amount (Rosle, anyone?) for such a simple device. First let me say that I generally dislike the "new style" peelers such as the over-lauded OXO peeler; those that have the curved "arm" over the swiveling and peeling business end. When I'm blasting through carrots, parsnips, celery, asparagus, or even potatoes, the peels get caught up in the arm and munge up the works. This peeler throws the peeled skins off onto the cutting board, out of the way. It is fast, it is cheap, it is comfortable to hold, it is stainless steel, it is highly recommended by this board-certified tool fool. The other useful peeler I found in my independent market research is the Kuhn Rikon Piranha Swivel peeler. It's not as fast as this one, and it has the dreaded arm-over-the-peeler, but the serrated blade really will peel soft ripe peaches and bell peppers, something you have to do slowly anyway. The RSVP Endurance remains the workhorse in my kitchen, however.
