I received this set of knives for Christmas 2006 and the larger knife came defective. And since they advertise a "limited lifetime warranty" I figured I go straight to the manufacturer for a replacement. Bad idea. I contacted them in early January 2007 and no one got back to me. Then in early February I contacted them again. When I called they told me to email them describing the issue. I did and after a couple weeks and a lot of frustration I called back. This time I was told to send an email. Oh, what a surprise. I explained that I already sent an email and I was told that they were going through some changes and I was assured that someone would respond to my email this time. So I sent yet another email describing the problem. But unlike the previous emails, this one received a response. The email asked that I submit their return authorization form, which I completed and faxed back. Over two months later and I'm still wondering when this knife will be replaced.
So what good is a "warranty" if you can't get in touch with the company so they can honor their warranty?

Still, for the price, it's hard to go wrong. If you're starting out, going off to college, equipping a cabin or an RV, looking for knives to use when tailgaiting or camping, etc., these are great. An added bonus is that you'll have the experience to help you decide which of the shapes best suits your preference.
While they aren't professional quality, they're good value for the money. They have a range of blade shapes, making them a versatile set. Their color coding can be useful, too.
WASH promptly after use in hot soap and water, rather than put them in the dishwasher. They'll last longer and stay sharp longer, too. (They'll also set you up with good habits for when you do get the full tang forged versions by Henkel.)

Calling this a 'cleaver' is a bit off. Cleavers
are usually thought of as heavy, axe-like blades
ground to a convex profile and used with a swinging
motion to break or separate bones. This knife, on
the other hand is intended for all the cutting
tasks that one does in a kitchen with other knives.
What makes this the almost perfect knife is the width
of the blade. At over three inches, it provides a lot of
control surface in relationship to its edge. So the
cook who has learned to chop by guiding the knife
with his or her knuckles is almost immune from accidents.
The wide blade also makes this great for whacking
a clove of garlic before mincing it and for scooping
up chopped food from the cutting board.
The edge is easy to maintain-not too hard or too soft.
I use a chef's choice sharpener and keep the knife
on a magnetic tool bar to avoid knicking the blade.
The only thing wrong with this knife is the handle,
which is in a barrel shape and uncomfortable and
insecure in the hand. I modified mine with a bit
of coarse sandpaper, making grooves where my fingers
wanted to land.
This is my most frequently-used tool and one that I
recommend to students and friends.

That about sums it up. These aren't "knives," they're more like razor blades. Cut through a potato...no sweat. These are just unbelivable knives. Furthermore, they are comfortable to grip, so they make all cutting chores easier.
The only problem: I've already cut myself twice, once deep enough to bleed for hours. So if you get these, be careful! Of course, that's NOT a problem with the knives; rather it's my own novice cooking ability. Provided I don't remove all my digits, I'm sure I'll get the hang of these soon enough.
No, these aren't cheap knives, but they are most definitely worth the price...fantastic buy or gift idea. Now, if only I could get Rachael here to help show me how to properly use these knives...........:>) Seriously, a terrific product!

We purchased a Henckels Four-Star set about ten (10) years ago and use it daily. Out of the set of six or seven knives, this utility knife is our most frequently used. It is extremely useful in food preparation, holds an edge longer than the other non-serrated knives, and isn't affected by dish-washer abuse.
This is a great product that will last you many years. One caveat: NEVER allow your MOTHER-IN-LAW to borrow it and use it as a screwdriver. It will be ruined - hence my purchase of a second one of these knives.

I love this knife!!! I have searched so long for a knife that would allow me to clean my chicken the way i want. I hate thick chicken and when i clean it its important that i can cut it as thin as possible. It cut my cleaning time by at least 20 minutes(i clean a big family pack at a time). I knew a filleting knife would be the best bet but everywhere i looked they were over $100. You cannot go wrong with this price and this model.
I bought this from a third party (not amazon) and i do have to complain about the packaging, the plastic was all cut but i wasnt going to complain because there was no way you could get the knife out so i know it wasnt used. Other than that i HIGHLY recommend getting.

I have to admit that I was amazed at the beautiful quality of this knife--for the price paid, I had not expected anything close. These days, when you speak of knives selling for under $25, the first thing that comes to mind is "China". The second thing that comes to mind is "junk". (Though to be fair, I do have a cleaver and a couple of knives made in that country that are quite good, if not top of the line.) This usuba bocho is made in Japan, has good balance and holds a razor edge. Although it does not arrive exceptionally sharp, a quick honing will make it so. I heartily recommend this knife and also the seller.

This is a variation of my review of the J.A. Henckels International Forged Synergy 13-Piece Knife Set. But this 16-piece set is the one I'd recommend, so here goes... My wife and I have been using the Forged Synergy knives for about 2 years, and we couldn't be happier with them. They are well made, well-balanced, have beautiful handles, a nice finish, and hold a very sharp edge--we've sliced tomatoes with all of them. If you're buying your first set of fine knives, these WILL hold up to the Henckels reputation for quality.
Now regarding what some others have said about rusting and quality, I'll just add my two cents. There is a "Forged Synergy" and a "Fine Edge Synergy" series, and the main kitchen knives in those sets are NOT the same (though the steak knives appear to be so). The forged series has a metal tine that runs all the way through the handle with the black grips riveted on. The J.A. Henckels International Fine Edge Synergy 13-Piece Block Set is totally different--see the Amazon photos and descriptions for yourself. Yes, this Forged Synergy set is also made in China (not Spain or Germany like some of the more expensive Henckels sets that are 2 to 5 times more expensive), but the quality is still excellent and should far surpass most users' expectations.
Regarding rust spots, we've had none. However, there are two main types of stainless steel: one is harder and slightly less stain resistant; the other is more stain resistant but slightly softer. That means that you give up a little stain resistance to have a knife that holds a sharper edge longer. I think that's much more important than having to clean an occasional rust spot off if it were to occur. And usually, rust spots come from cheap kitchen gadgets whose rust sticks to the stainless--not that the stainless itself is rusting.
There are only two minor faults I find with this set (that didn't stop me from buying it, however). The kitchen shears are excellent quality and cut great, but the two parts should be easily separable for cleaning purposes. You'll see this in newer shear designs, and it's not a feature that would add to the cost. Also, the black finished knife block will eventually show wear and tear from missing when inserting knives into the slots. I'd have prefered a standard maple block. Lastly, for a few dollars more, I recommend the 16-piece version of this set over the 13-piece set because you get three more knives for about the price of one more.

I've had this knife for a few weeks now, and it has made chopping onions, peppers, and fresh herbs (my main digs) an absolute pleasure. It glides through everything that I put under it. I hone the knife every time I take it out of the drawer, and it's still as sharp as the day I got it. I'm planning on a professional sharpening after about six months of use, considering how much I use it.
***Fair warning-- this review contains a description of an injury sustained while cooking. If you stop here, though, just know that this knife is FANTASTIC.***
About a week and a half ago, I was slicing an onion parallel to the cutting board (for a fine dice) and I underestimated its sharpness-- I put a little to much pressure behind it, and it slipped into my finger, including quite a bit of fingernail. Ouch. The cutting, however, was still brilliantly sharp. When I went to the emergency room, the nurse and attending both commented on the cleanness of the cut and asked me what kind of knife it was. I told them, and they both seemed impressed. I figure those are some professionals who know the work of a good blade when they see it.
Highly recommended--- just don't underestimate it. This blade deserves your respect.

I purchased this three piece paring knife set in addition to a more expensive Henckels paring knife J.A. Henckels Twin Four Star 3-Inch High Carbon Stainless Steel Paring Knife. This set is good quality. Stamped on the blades are the words "German Stainless Steel" and "Made in China". They have a good sharp edge and a textured, shaped plastic handle that provides a good grip. The package says that the knives are "stamped one-piece blade construction for strength and durability". It also says that the handles are "fully closed polypropylene", "breakproof, dishwasher safe, and hygienic." They are lightweight and have a nice finish on the blades.

This is one of the first global knives I bought. I loved it the first time I held it in my hands. What impressed me most was the perfect balance, the lightweight, and the sharpness. However, what may be perfect for me may not be perfect for you. I'd recommend anyone who is shopping for cutlery to go to a store and try how the knife feels in your hands before buying. And if you can borrow from a friend to try, that's even better.
Having used this knife for several years now, my initial impressions haven't changed. This is still my favorite knife for most tasks. I maintain it regularly with a steel and it is as sharp as it ever was. I have found though that for certain tasks like cutting slits into an onion for dicing or cutting root vegetables, I do prefer a heavier knife (that's why I bought another forged global knife), but that is just personal preference. All in all, a great general purpose kitchen knife.

After six weeks of ownership of this knife (Forschner 40547) I can tell you it is mislabeled. It is called a "Bread Knife," but it should be called a "Bread, Meat, Carving, Sandwich, and Other Stuff Knife."
Here's how I made a sandwich a few minutes ago. Use knife to slice large rye bread. Use knife to slice some corned beef into slices so thin you can't pick them up with your fingers. Go ahead and use same knife to swab some mayo onto the bread. Use knife to slice sandwich in half (duh). Use knife to pick up two sandwich halves from cutting board. That's five uses for one sandwich, and not one other utensil needed.
The edge is still deadly sharp.
The Fibrox handle gives a good, solid grip.
The curved edge allows you to cut through only the very center part of a tough bottom crust. And if you draw the knife straight across, say, a slice of soft bread, the curve causes the knife to act as a guillotine as it enters the leading edge of the victim, which reduces tearing.
Although I haven't tested it because my little brother does all the fancy knife-work at family get-togethers, my guess is that this knife would carve a turkey or a smallish emu just dandily.
At a total length of 15 inches, this will likely be the longest knife in your collection, so I'm not saying it would be your first choice for slicing an olive. But if you can learn to handle a knife this long, it does a lot more than slice bread, and it does it well.
My only complaint is that the top edge of the blade is also curved, so you can't use it to scrape a cutting board of its contents. But maybe there's a design reason for that that I don't know about.
I wish I had owned this knife 20 years ago.
Update of December 2007: The more I have this knife, the more I realize how often I reach for it first among the five knives I use.

What is a stamped blade? A stamped knife can usually be identified by the absence of a bolster. Stamped blades are cut into their shapes from cold-rolled pieces of steel and then ground, tempered, and sharpened. Creating them requires many less steps than forging and results in lighter, narrower blades. Some professionals prefer the thicker, heavier forged blades, but many pros, who spend much of their day cutting and slicing, enjoy a lighter knife since it\'s less fatiguing and easier to manipulate at speed.

General kitchen tasks and the knife to use for them are as follows:
Paring: The most common to own and use, a paring knife is generally for small cutting jobs and peeling of vegetables or fruit. The blade size is usually from three to four inches. Choose the shape and size to fit your hand. Since this is one of the more versatile knives, owning more than one is recommended.
Chef's: The most important tool and essential to every cook, a chef\'s knife is most often used in a rocking method to mince, dice, and chop vegetables and herbs. This one is known as the chef\'s best friend.
Slicer: Most commonly used to slice meats, poultry, and seafood, the slicer is an important companion to any host or hostess.
Boning: As its name suggests, a boning knife is used to trim or remove meat and fish from the bone.

What are the different knife edges and what do they do? Straight: The vast majority of Victorinox knives come with a straight or fine edge. This means it has a perfect taper along the blade and no serrations. It is designed to cut without tearing or shredding.
Serrated: An edge designed with small, jagged teeth along the edge.
Scalloped: A blade with waves along the edge generally used to cut breads with a hard crust and soft interior, as well as tougher-skinned fruits and vegetables.
Granton: This edge has hollowed-out grooves or dimples on the sides of the blade. These grooves fill with the fat and juices of the product being cut, allowing for thin, even cuts without tearing. Even with the grooves, these are still straight-edge knives and can be honed with a sharpening steel.
How should I care for my cutlery? After use, knives should not be allowed to soak in water. The best practice is to hand wash and dry them immediately. This is especially true if they have been used on fruit or salty foods, which may cause some staining, even on stainless steel. Most knives require very little maintenance and it is worth the effort to protect your investment.
Though Victorinox knives are dishwasher safe, this is strongly discouraged. The dishwasher\'s agitation may cause damage. Additionally, harsh detergents can be harmful and cause pitting and spotting on the blades. The handles may also discolor and develop a white film with constant use of the dishwasher. Plus, intense heat associated with dishwashers is not good for the temper of the blade.
How do I keep my knives sharp? All quality knives require proper maintenance to keep them in perfect cutting shape. The best of edges will quickly dull if it strikes metal, glass, or Formica. A wooden cutting board makes the best cutting surface. And, if a slip occurs, a proper cutting board is safer for the user. Frequent use of a Victorinox sharpening steel will keep blades in tip top working condition. All straight-edge knives need steeling to keep their edges.

How to "Steel" a Knife 1. Hold the steel firmly in your left hand with the guard positioned to stop the blade should it slip. 2. Hold the knife in your right hand and place on top part of steel as shown. 3. Raise back of blade one-eighth inch. 4. Now, moving the blade only, draw it across the steel in an arching curve, pivoted at your wrist. The blade tip should leave the steel about two-thirds of the way down. 5. Repeat the same action with the Blade on the bottom side of the steel. Always maintain the same pressure and angle on both sides of the steel. 6. Repeat five or six times.
When a sharpening steel no longer does the job, it\'s time to take the knife to a qualified knife sharpener who will place a new edge on it. This, along with use of the sharpening steel, will give you many years of sharp, safe blades.
Please note that electric knife sharpeners can be harmful. They have to be used carefully as they remove too much metal, can harm the temper of the blade, and most important can change the factory-applied edge angle.
How should I store my knives? Safety is the biggest concern of storage, both to the user and to protect the knife's edge. Choices include a knife magnet, knife block, drawer insets, and also individual knife protectors.
