The Shun Ken Onion 7-in Santoku is perhaps the best knife I have ever held in my hand.
For years, my knife collection consisted of assorted Henckels 4-star and Wusthof Grand Prix knives, which I found to perform very well. However, I recently became curious about the recent hype over santoku knives and what qualities, if any, set the santokus apart from chef's knives.
Given the Shun reputation, I decided to try several of their santoku knives. My evaluation of them was primarily based on weighting and feel. I tried the Shun Classic 4" and 7" santokus, as well as the Ken Onion 7" santoku. I found the Classic 4" to be surprisingly unbalanced and would therefore -not- recommend it. The Classic 7" santoku felt good, and has a weighting that is on par with the good weight distribution of Henckels 4-star knives. However, the Ken Onion 7" absolutely blew the others away in terms of weighting, balance, and control.
The Ken Onion 7" Santoku has a superbly weighted feel that truly sets it apart from other knives I have tried. It is noticeably heavier than German and Shun Classic knives (chef's and santokus). While some prefer the lighter weight of other santokus (lighter due to the thinner blade), I find that the weight of the Ken Onion santoku provides superior control for chopping and dicing that cannot be achieved by a lighter knife. The blade of the santoku is already thinner than the blade of a chef's knife, so because of that, you still get the greater precision of the santoku blade without sacrificing control.
The balance of this knife is superb. It is unlike any other large knife that I have held. This knife has become the one that I always reach for, and my Henckels chef's knife has become obsolete. Most things can be done using a santoku instead of a chef's knife, I've found. In fact, it is better for chopping vegetables and works well on meat. (However, I still recommend a carving knife for thin cuts of meat.) My other knifes, while very good by general knife standards, just don't feel as good as the Ken Onion 7" santoku.
The hollow ground features of this knife will cost you a bit more than the straight blade santoku, but it does keep vegetables from sticking as much. It does not, by any means, prevent sticking altogether, but there is an improvement. It is hard to say whether it is worth the additional cost -- it really is a personal preference.
Finally, this knife is gorgeous. Its form and function are unparalleled -- the Ken Onion 7" santoku is not only a pleasure to use, but a masterpiece to the eye, as far as knives are concerned. The handle fits extremely comfortably into my smaller hand, and I have been told, repeatedly, that this knife works for both rightys and leftys.
While I cannot say say that this knife is a bargain, its performance is superb and I truly enjoy using it. Many of the German knives or the Shun Classics will work very very well for the typical chef, but Ken Onion knives are great for collectors and avid chefs. The quality is outstanding -- made using a technique employed by japanese swordsmiths. The stiffeness of the blade is remarkable compared to others that I have tried.
Most of the cooking process deals with preparation, and a good knife is perhaps the best investment that you can make. Ken Onion knives make prep time so much more pleasurable that it may easily be worth the additional dollars. I assure you that you, too, would be proud to own one of these.

In Anthoney Bourdain's book "Kitchen Confidential" he talks about how in a real kitchen the chefs don't use Henkle or Wustoff knives, they use Global. Cat Cora of "American Iron Chef" also uses Global knives. I needed a good knife in my kitchen so I decided to check out Global as well.
First of all, it's incredibly light. If I'm chopping a LOT of onions for a french onion soup or making a big batch of mirepoix for some beef stock I notice that lightness.
Then there's the balance. See that notch where the blade meets the handle? Pick the knife up by that notch and it balanced exactly level. Try that with a standard knife and you'll see how handle heavy they are.
Finaly, the edge. These knives are insanely sharp. They cut like a dream. I just went to a knife sharpening clinic by Wustoff and they suggest honeing your knife with 5 or 6 stroks on a steel before every meal that you cook. I've found that this keeps the edge razor sharp. However, you should realize that the edge on these knives is at 15 degrees, not 20 degrees. So adjust the angle you use to hone the edge.
Overall, it's an amazing knife. Take care of it and it will serve you as a professional quality tool for a long time.

Let me first say that the Shun knives, including the 3 1/2 in paring knife, are fantastic. They are the sharpest kitchen knives around and hold an edge very well. The craftsmanship and quality are also extremely good.
However, a $45 paring knife does not make sense unless price is no object for you. You can get a Forschner 3 1/2 inch paring knife (rated number 1 by Cook's Illustrated) for $4.95, a tenth of the cost of this knife. As an owner of both knives, I can say that the Forschner is almost as sharp as the Shun and more comfortable to hold. Certainly the Shun is not 10 times as better as the Forschner.
It should also be noted that the prices on all the Shun knives have gone up after Alton Brown started promoting them. This paring knife was $30 a year ago when I bought it.
In summary, if price is no object for you and you want the best paring knife you can get, buy this knife. Otherwise, I would think twice before making this purchase.

I've had this knife for a few weeks now, and it has made chopping onions, peppers, and fresh herbs (my main digs) an absolute pleasure. It glides through everything that I put under it. I hone the knife every time I take it out of the drawer, and it's still as sharp as the day I got it. I'm planning on a professional sharpening after about six months of use, considering how much I use it.
***Fair warning-- this review contains a description of an injury sustained while cooking. If you stop here, though, just know that this knife is FANTASTIC.***
About a week and a half ago, I was slicing an onion parallel to the cutting board (for a fine dice) and I underestimated its sharpness-- I put a little to much pressure behind it, and it slipped into my finger, including quite a bit of fingernail. Ouch. The cutting, however, was still brilliantly sharp. When I went to the emergency room, the nurse and attending both commented on the cleanness of the cut and asked me what kind of knife it was. I told them, and they both seemed impressed. I figure those are some professionals who know the work of a good blade when they see it.
Highly recommended--- just don't underestimate it. This blade deserves your respect.

This is one of the first global knives I bought. I loved it the first time I held it in my hands. What impressed me most was the perfect balance, the lightweight, and the sharpness. However, what may be perfect for me may not be perfect for you. I'd recommend anyone who is shopping for cutlery to go to a store and try how the knife feels in your hands before buying. And if you can borrow from a friend to try, that's even better.
Having used this knife for several years now, my initial impressions haven't changed. This is still my favorite knife for most tasks. I maintain it regularly with a steel and it is as sharp as it ever was. I have found though that for certain tasks like cutting slits into an onion for dicing or cutting root vegetables, I do prefer a heavier knife (that's why I bought another forged global knife), but that is just personal preference. All in all, a great general purpose kitchen knife.

I have begun replacing all the knives I have accumulated over the years, and after much research have decided that the Shun line will do me nicely. Like most folks I cannot buy a whole set all at once, nor do I think I need a whole set, so will be buying them one at a time. The Nakiri knife was my first purchase of the Shun line for several reason's. I first saw it being used on a popular food show and noticed it seemed to be the chef's favorite knife. He could be seen using it for almost every cutting task, slicing, dicing and even light chopping. I decided after some more research to put that knife to the test myself. This is a wonderful all round knife. It will do almost every task you use a knife for. Notice I said almost, there are some specialty tasks that it does not do well, such as boning and filet work. But when slicing, dicing and chopping vegetables it really shines. It is so sharp out of the box that it requires no effort to slice even the harder root veggies. I find the weight and shape of the knife to be very comfortable and the overall length seems perfect. The "D" handle took no time at all to adjust to and really helps to locate the knife in the hand. This is a great knife and will serve me for many years. Highly recommend.

I was given this knife as a birthday gift six months ago. It is absolutely wonderful! Perfectly balanced, sharp, and nice to look at. The fact that it is so well balanced makes it extremely easy to use. Slicing watermelon or cutting sweet potatoes requires hardly any effort any more! All I have to do is let the knife do the work. Chopping vegetables for a tomato sauce is a cinch with this knife. I have a large family and it is not unusual that I have to prepare dinner for 12 to 15 people and this knife has made it easy for me. I intend to get a full set of these knives eventually. In my opinion, there is no comparison to my Sabatier chef's knife.

My new favorite knife manufacturer! I bought the Global 7" vegetable knife after using the smaller 5 1/2" vegetable knife for six or eight months. The balance and dimpled grip works well for me. The shape of the blade is somewhat similar to a Chinese Chef knife and I find both of the Global Vegetable Knives to be great all purpose knives. Caution, these knives are so sharp that I have to use care not to choke up on the handle and accidently nick my index finger on the heel of the blade. Just a reminder to practice good knife skills and not be careless with these fine blades. They are clean and practical with their beautiful one piece stainless design and it is fun to see them in the hands of celebrity chefs on the Food Network from time to time. Although Global is in the upper half of the cuttlery price range, I think that they are a good value. We live in our kitchen and love expanding our culinary expertise so it is a pleasure to have quality tools.

I have 10 Global knives covering a wide range. I bought each individually over the course of several years and put quite a bit of thought into each purchase to ensure that it met a need and that the Global knife was the best designed knife of its kind (usually the case which is why I own more Global knives than other kinds). Despite my broad range of choice I find myself pulling the 5.5" vegetable knife off the wall more than all others. I'm a sharpening fanatic and this knife is unbelievable - I can effortlessly dry shave hair off my arm (it will grow back). I believe it's my most frequent choice because the size is just right for almost any chopping job - vegtables, fruit, meats, breads (you don't need a bread knife if your regular knife is insanely sharp), sandwiches and even some cheeses. The fact that the knife is blunt nosed initially did not attract me to it but the broad side of the knife is usefull for picking up food or spreading and makes the knive a bit less intimidating. The knife is ultra light in weight and the triangular handle, a unique design to Global knives, fits so well in your hand that I wonder why Global is the only company to make such a handle. I personally have not experienced the slipping problem that another reviewer has. The handle has a notch just before the blade so you finger is not even close to the cutting edge - it is a very safe design. I have other knives that are "nicer" in some respects but I don't use them as much and if I had to give away all my knives but one this would be the one I would keep.
