I called all of my friends. I can't believe it! I make my own cheese. It's so fast and so much fun and I can add all sorts of stuff to it. The key is the amount of time and the temp. at which you knead it. If you knead too long, it's more like regular mozzarella, (not the fresh kind) but still delicious. If you knead just the right amount of time, it's less dense and more like fresh mozzarella.
Seriously, you gotta make your own cheese. Who knew it was this easy.

(More customer reviews)Sure -- Rennet is used for all kinds of practical things-- cheesemaking being one of them, ice cream being another. Now I don't know who introduced me to Junket Rennet in that simple humble blue and white box (I see the design has not changed in eons -- good for you Junket!!) when I was a little kid in the 50's -- maybe Mom Sylvia. I think she actually made little Rennet puddings for me for a while, and I loved them. Oh yum!! I still do!!
But eventually the task of making Rennett Pudding using Junket Rennet fell to me -- and only me -- because it turned out that I was the only one eating these wonderful Junket Rennet creations. So (heh heh) I got to eat ALL of it, anytime I made a batch.
I suppose one day I will make the ice cream, and the cottage cheese, but right now, I have my sights set on one and only one thing-- the delightful anticipation of carefully cooking the milk, opening the foil packet, adding the rennett tablet and sugar, popping it in the fridge, and waiting.... I wait a few minutes, open the fridge door, close the fridge door -- come back 5 minutes later and keep repeating the process until...... Ah!! Look!! The white pudding is firm at the edges of the dish, but is jiggling gently in the middle, which means it's time to set this dish in front of my happy face, and sit at the table with a teaspoon, to slowly savor the goodness of a most unusual and refreshing dessert that brings back so many wonderful memories.

Basic Hard Cheese Kit Review

(More customer reviews)First, you need to understand that this kit does not contain all that you need for making hard cheeses. As it says in the introduction to the instruction booklet, if you are making hard cheese, you must also have cheese wax. I don't know why they would sell a kit that doesn't contain all the necessary items, but at least you are now warned.
Second, the instructions are not written clearly. You would be MUCH better off getting your instructions off the Internet, and save your money.
The items in the kit are of fine quality, however, and if you do not really need instructions for cheese making, then this might be fine for you.

(More customer reviews)I have read the dissatisfaction of the two previous reviewers. Personally, I used this rennet some time ago when I first got into cheese making. I was very happy with it- I had no problems getting the milk to set (I was even using homogenized milk without calcium chloride additive). The fact that it is liquid is a mixed blessing in that you do not have to crush it up and mix it in water like tablets, you just need to dilute it. However, being liquid does shorten its shelf life considerably.
Since then I have switched to tablets because of the longer shelf (or rather freezer) life, as well as the lower price of tablets. Based on my experience with it, I could easily recommend this product without reservation to anyone looking to make cheese.
