(More customer reviews)This is my all-time favorite kitchen knife (the Forschner / Victorinox Steak Utility Knife, 4 3/4 in Straight, Rosewood Handle, pointed Tip Model 40002 ). The blade is strong, yet thin. This thin-ness makes it ideal for many many jobs, as it slices through fruits and vegetables much easier than a knife with a thicker blade. The size of the knife makes it good for paring & peeling, general kitchen use, or as a fine steak knife at the table.
The quality of the steel is excellent. It takes a razor edge when sharpening and holds the edge for a good period of time. I have one of these knives that is over 15 years old, it gets used multiple times every day, and it is still in excellent condition.
For sharpening, I use a Chef's Choice 120 (with 3-stage honing/polishing). Then I use a sharpening steel, and after that a ceramic sharpening steel. Then the edge is as good as it was when it came fresh from the factory. I have never needed to use the coarse honing stage of the 120 on my 15-year old blade, just the two finest honing stages. (Note - I don't like the Chef's Choice 130 - it has only two-stage honing, and the built-in sharpening steel does nowhere near as good a job as a hand-held steel. The 3-stage honing of the 120 is much better).

(More customer reviews)These knives are sharp. I have both the serrated and non serrated steak knives. They are the best value of cheap, quality steak knives I have found. The only reason it did not receive 5 stars is I wish the handles were a little bit bigger. Even with my small hands, my pinky finger is right on the edge. The handle could also be a little thicker for more comfort. Overall, I love them and they are dishwasher safe. A word of advise: It's cheaper to buy 3 packs of 2 rather than the six pack.

(More customer reviews)These are truly very sharp, good working knives. I was so happy with the tomato knife that I bought a 2nd one, the steak knife set, and the carving knife. Love them all, except: Just be aware that (now that I've had them for several months) the handles are brushed aluminum which gives a good offsetting weight in the hand, however, the shiny silver color turns dingey gray. If you don't mind that-especially bec now they don't match the silver color of the blade, then they are a great buy. I would give 5 stars if they didn't discolor. NOTE: I NEVER ONCE PUT THEM IN THE DISHWASHER.

After reading about our trade deficit, unemployment problems, tax issues, and all of that, I am really happy to find a great American product to buy and recommend. Why buy foreign, imported knives? These knives are relatively light in weight, fit well in the hand, and cut through steaks the way they should. Fantastic. No reason at all to look to an import.
