These egg-free "mayonaises", are properly sold refrigerated, to protect against rancidity without the use of preservatives. There are several varieties available, the best being "expeller pressed", meaning the oil was extracted at very low temperatures.
The taste rivals that of the best store brands, with the added benefit of using fats that are healthful and don't stress the liver. Not cheap, but you are paying for a a superior product, at least health-wise.
