I bought this from Amazon about six months ago, after reading several Japanese cookbooks and nutrition articles that extol the benefits of the vitamin B and iodine rich kombu seaweed. (American soils are iodine deficient, so this is a good way to get it). It is mild in taste and doesn't taste "sea-weedy" like wakame does. It's great in as a soup stock because it enhances the flavor of the other ingredients. (Kombu contains natural sodium glutamate) Because kombu is dried, it stays good in the cabinet for a very long time. It's probably a good food to have in an earthquake kit as long as it's kept dried. Unlike many of the other Kombu seaweed's for sale on Amazon that come from the coast of China (such as Emerald Cove), this slightly pricier Eden brand comes from the coast of Japan where the ocean water is cleaner. (On Eden's website they say that this kombu is wild harvested from the Arctic current waters of Hokkaido, Japan) I've also successfully made flavor-enhanced oatmeal by cutting it up with kitchen scissors into my oatmeal, nicely blending the flavors with the walnuts, pecans, raisins, and cranberries. Kombu is a staple of the Japanese diet and you can find a large number of great cookbooks that will show you how to use it. Considering that most older Americans are deficient in B vitamins, this is a simple and cost effective way to improve you diet.
